At Liberty Delight Farms we want your purchase to be as convenient as possible. That is why our fee is an all inclusive fee. Most local farmers will charge and collect the “hanging weight per pound” charge. Then you pay the butcher an additional per pound processing fee for harvesting, cutting and wrapping the meat.
At Liberty Delight Farms you pay one price for everything. We pay the butcher. PLEASE note, however, you still are provided the benefits of determining your custom cuts, and packaging. Please click the link for our order form.
We sell our meat by the industry standard of “hanging weight”. Hanging weight is the weight of the carcass immediately after harvesting with the hide, head and entrails removed.
It is important to note that your take home meat will be less than the hanging weight based on a few factors like shrinkage and trimming. During the dry aging process shrinkage occurs. Also during the cutting process there will be trim loss due to excess fat and bone. I mention these things for on average the take home meat can be up to 20-25% less than the hanging weight.
The advantages of purchasing a side of beef outweigh the disadvantages for me. You may disagree.
