Instructions
- To Make the Glaze-- Combine all glaze ingredients in a small saucepan. Warm over medium heat until it reaches a boil. Cook until sauce reduces down (about 3 minutes), stirring occassionally. Set aside.
- Cooking the Pork Chops-- Place a cast iron skillet in the oven and preheat to 400 degrees (F).
- Pat chops dry with a paper towel, then rub with olive oil and sprinkle with salt and pepper.
- Remove skillet from the oven and place on burner over medium-high heart. Place chops in the skillet--you should hear them sizzle right away! Let them cook 2-3 minutes to sear. Then brush chops with the maple balsamic glaze.
- Flip chops over and apply glaze to the other side then transferring the skillet back into the oven. Bake at 400 degrees (F) until a meat thermometer inserted into the center of the chops reads 140 degrees (F). This should take between 5-8 minutes depending on the thickness of your chops.
- Transfer chops to a plate, tent loosely with aluminum foil and let them rest for 5 minutes. Drizzle glaze over the chops right before serving...enjoy!
